Serves: 2 people (or 1 very hungry person who refuses to share)

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes

🛠 Tools Needed

  • A large skillet or frying pan
  • A chopping board
  • A knife
  • Measuring cups and tablespoons
  • A wooden spoon or spatula

🛒 Ingredients

  • 2 cups white fish fillets (like cod or haddock), cut into bite-sized pieces
  • 2 cups pre-cooked rice (you can use microwave rice pouches to keep it simple)
  • 2 cups fresh baby spinach
  • 1 cup zucchini, cut into small cubes
  • 1/2 cup lactose-free cooking cream (or light coconut milk)
  • 1/4 cup green spring onion tops, thinly sliced (green parts only)
  • 2 tablespoons garlic-infused oil
  • 2 tablespoons tamari (gluten-free soy sauce)
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh ginger, grated
  • 1 pinch salt
  • 1 pinch black pepper

🍳 Step-by-Step Instructions

Step 1: Get Everything Ready (Prep Work)

Before turning on any stove burners, get all your ingredients chopped, measured, and placed next to your pan.

Place your cut fish pieces into a small bowl. Pour 1 tablespoon of lemon juice over the fish, add a pinch of salt and pepper, and gently mix with your hands or a spoon.

Chop the green tops of the spring onion into thin rings.

Dice the zucchini into small, bite-sized cubes.

Step 2: Heat the Oil and Cook the Zucchini

Place your skillet on the stove and turn the heat dial to medium-high.

Pour in 2 tablespoons of garlic-infused oil. Let it warm up for about 30 seconds (you will see the oil spread out easily across the pan).

Add the 1 cup of diced zucchini and 1 teaspoon of grated ginger.

Stir continuously with your wooden spoon for 2 minutes.

Step 3: Add the Fish

Gently place the prepared fish pieces into the pan alongside the zucchini.

Cook for 2 minutes, stirring very gently so you don’t break the fish pieces apart. You will see the edges of the fish turn from clear to white/opaque.

Step 4: Add Spinach and Liquids

Toss the 2 cups of fresh baby spinach right on top of everything. It will look like a lot, but it shrinks down quickly.

Pour in 2 tablespoons of tamari and 1/2 cup of lactose-free cream.

Stir gently for 1 to 2 minutes until the spinach leaves wilt and shrink.

Step 5: Warm the Rice Through

Add the 2 cups of pre-cooked rice into the pan.

Turn the heat down to medium-low.

Gently fold everything together until the rice is completely coated in the sauce.

Let it sit and bubble gently for 3 minutes until the rice is hot all the way through and the fish is fully cooked (it should flake easily if you touch it with a fork).

Step 6: Serve

Turn off the stove burner.

Sprinkle the 1/4 cup of sliced green spring onions over the top.

Scoop into two bowls and enjoy!
