I’m having some yummie Dutch cream pie with a nice cup o’ black coffee for breakfast right now. YUMMM, so tasty and so NOT good for my diet (wtf do I care about a diet anyway?)
I figured to share the recipe for making your own classic Dutch cream pie. Decorating this pie is actually quite fun to do with the kids. We all love to play with whipcream, don’t we?
100 gr sugar
2 x 100 gr crispy hazelnut bits
60 gr butter
6 egg whites
6 egg yolks
50 gr flower
some butter for Springform pan
750 mililiter whip cream
various canned fruit (pinneappel, strawberries, oranges, kiwi, grapes)
How to do it:
Have the butter melt in the microwave for a few seconds. Then, when it’s nice and soft you can start stirring while adding the egg yolks one by one and the sugar. Keep stirring until the mixture is nice and fluffy and is light yellow.
Put the egg whites in another bowl and keep stirring these until nice and fluffy. Add the flower and the crispy hazelnut bits en carefully mix it all together with a spoon.
Grease in the Springform pan with some butter. Fill the Springform pan with the first mixture and put in the oven. Bake for about 60 minutes in 140 degrees celcius. After 60 minutes, when the cake is a nice golden color, take out of the oven and have it cool off for a while.
Stir up the whip cream and add some sugar until it’s fluffy. When the cake is cold, slice the cake into two layers. Spread some strawberry jam on the bottom layer and 2/3 of the cream on both the bottom and top layer. Stack the two slices back on top of one another again. Use the rest of the cream to cover the entire cake.
Decorate the cake with the crispy hazelnut bits on the sides and playfully sprinkle whatever is left on the top. Also add the lil chocolates and the bits of fruit. Viola; there’s your Dutch Cream Pie.
Tips & Variations:
– Add some cacoa to the cake mixture and the whip-cream mixture and replace the random fruits with cherries for a yummie chocolate cream pie
– You could put the entire pie in the freezer for a while. Frosted cream pie is just delicious with a nice cup of coffee 🙂
