Bubur Ketan Hitam recipe

Another typical Indonesian recipe for you. This is a nice dish you can serve during breakfast or for dessert. We actually just had some this morning. It’s very nourishing and filling.  Bubur Ketan Hitam is actually a sticky black rice pudding. Kids will love it too.

Most of these ingredients are found in your local Oriental store.

1 3/4 cups black sticky rice (ketan hitam)
2 pandan leaves
5 cups water
1/2 cup palm sugar
1/2 teaspoon salt
1 1/2 cups coconut cream




1 Rinse rice thoroughly for an evening in water. Cleanse the rice before boiling it. Drain well. Put 5 cups of water, rice and pandan leaves into a heavy stockpot. Simmer over medium heat for approximately 40 to 50 minutes.

2 Add palm sugar syrup and continue to cook until most of the liquid has evaporated. Season with a pinch of salt. Remove from heat, allow to cool.

3 Serve at room temperature, topped with a swirl of fresh squeezed creamy coconut cream.

Tips and Variations:
– You may also boil the coconut cream with the rice together. Afterwards you serve the black rice pudding with some cold coconut cream topping.
